What You’ll Need
Base
- 1 tin Lata Stuffed Squid in Olive Oil
- 1 tbsp olive oil (from the tin if possible)
- 1 small shallot or 2 tbsp onion, finely diced
- Salt, to taste
Lime Slaw
- 1 cup shredded cabbage (green or purple)
- 1 tbsp fresh lime juice
- 1 tsp olive oil
- 1 tsp cilantro, finely chopped
- Pinch of salt
- Optional: 1–2 tsp grated carrot for color
Arepas
- 1 cup masarepa (precooked corn flour)
- 1 cup warm water
- ½ tsp salt
- 1 tsp neutral oil (for cooking)
To Serve
- Extra cilantro
- Lime wedges
- Pickled jalapeños or hot sauce (optional)
How to Make It

Prepare the Slaw
In a small bowl, toss together the cabbage, lime juice, cilantro, olive oil, and a pinch of salt. Set aside to lightly marinate while you prepare the rest. -
Make the Arepas
In a medium bowl, mix the masarepa, warm water, and salt until a soft dough forms. Let rest for 2 minutes, then divide into 4 small discs.
Heat a lightly oiled skillet over medium heat and cook the arepas 4–5 minutes per side, until golden and slightly crisp. -
Build the Filling
Heat a small pan over medium-low with 1 tablespoon of olive oil (use the squid oil if possible). Add the shallot and cook until softened. Roughly chop the stuffed squid and add it to the pan, letting it warm gently for 1–2 minutes. Season lightly with salt.
Tip: Avoid overcooking — the squid is already perfectly tender. -
Assemble
Split the warm arepas open and gently stuff with the squid mixture. Add a generous spoonful of lime slaw and finish with fresh cilantro.
