What You’ll Need

Base

Vegetables

  • 1 cup roasted or sautéed vegetables (zucchini, carrots, or asparagus work well)
  • ½ cup cherry tomatoes, halved
  • ¼ cup cucumber, sliced

Dill Yogurt Sauce

  • ½ cup Greek yogurt
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • Salt and black pepper, to taste

To Finish

  • Olive oil or a drizzle of the salmon’s rapeseed oil
  • Fresh dill or microgreens

How to Make It

  1. Make the Dill Yogurt
    In a small bowl, stir together the yogurt, dill, lemon juice, lemon zest, salt, and pepper. Taste and adjust acidity as needed.

  2. Prepare the Bowl Base
    Divide the warm grains between two bowls. Season lightly with salt and fluff with a fork.

  3. Add the Salmon
    Gently remove the salmon from the tin, keeping the fillets intact. Break into large flakes and place on top of the grains.
    Tip: Drizzle a little of the fragrant rapeseed oil from the tin over the bowl for extra depth.

  4. Assemble the Vegetables
    Arrange the roasted vegetables, tomatoes, and cucumber around the salmon for color and balance.

  5. Finish and Serve
    Spoon the dill yogurt generously over the bowl. Finish with fresh herbs and a final drizzle of oil. Serve warm or at room temperature.
