What You’ll Need
Codfish Cakes
- 1 tin Lata Codfish in Extra Virgin Olive Oil
- 1 cup mashed potatoes (cooled)
- 1 tbsp finely chopped parsley
- 1 tbsp finely chopped shallot
- 1 egg yolk
- 2 tbsp breadcrumbs (plus extra for coating)
- Freshly ground black pepper
Lemon Aioli
- ½ cup mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 small garlic clove, finely grated
To Assemble
- 4 small brioche slider buns
- Handful of arugula or baby greens
- Olive oil for frying

Prepare the Codfish Mixture
Drain the codfish, reserving a little of the olive oil. Flake gently with a fork. In a bowl, combine the codfish, mashed potatoes, parsley, shallot, egg yolk, and breadcrumbs. Season with black pepper and mix just until combined. -
Form and the Cakes
Shape into small patties and lightly coat with breadcrumbs for extra crispness. Heat olive oil in a skillet over medium heat. Cook the cakes for about 3–4 minutes per side, until golden and heated through. Transfer to a paper towel-lined plate. -
Make the Lemon Aioli
Whisk together mayonnaise, lemon juice, zest, and grated garlic until smooth. Adjust acidity to taste. -
Assemble the Sliders
Lightly toast the brioche buns. Spread lemon aioli on both sides, add arugula, then place a warm codfish cake on top. Close and serve immediately.
