After each Bluefin tuna is gently cooked in sea water, the delicate ventresca fillets are packed in a tin, always by hand, because no machine process would be capable of keeping such a tender cut intact. The ventresca is then covered in olive oil, keeping it rich and moist and enhancing its delicate flavor.
