Artesanos Alalunga Hake Cheeks (Cocochas de Merluza) in Green Sauce
(135 g) Hake cheeks, known as cocochas in Spain, are considered one of the most exquisite parts of the fish. Each cheek is carefully trimmed and gently slow cooked before being preserved in a traditional green sauce made with hake fumet, garlic, parsley, and Arbequina extra virgin olive oil.
